INGREDIENTS
• 2 cups all-purpose flour
• 2 teaspoons baking powder
• 2 tablespoons sugar
• 0.5 teaspoons salt
• 2 large eggs
• 1.8 cups milk
• 0.3 cups unsalted butter, melted
• 0.3 cups Butteroo pistachio spread
• 1 teaspoons vanilla extract
• 0.3 cups Butteroo pistachio spread, for the drizzle
• 2 tablespoons milk, for the drizzle
• 3 tablespoons crushed pistachios, for topping
STEPS
1. Heat the iron and mix dry ingredients: Preheat your waffle iron. In a large bowl, whisk together the 2 cups all-purpose flour, 2 teaspoons baking powder, 2 tablespoons sugar, and 0.5 teaspoons salt.
2. Whisk the wet ingredients: In another bowl, whisk the 2 large eggs, 1.8 cups milk, 0.3 cups unsalted butter, melted, 0.3 cups Butteroo pistachio spread, and 1 teaspoons vanilla extract until the Butteroo is fully blended in and the mixture is smooth.
3. Make the batter: Pour the wet ingredients into the dry and stir gently just until combined. A few lumps are fine — don't overmix.
4. Cook the waffles: Ladle batter onto the hot iron and cook until golden and crisp, following your waffle iron's guidance. Repeat with the remaining batter.
5. Make the Butteroo drizzle: Stir the 0.3 cups Butteroo pistachio spread, for the drizzle together with the 2 tablespoons milk, for the drizzle until smooth and pourable, adding a splash more milk if needed.
6. Drizzle and serve: Stack the waffles, drizzle generously with the warm Butteroo sauce, and finish with a sprinkle of 3 tablespoons crushed pistachios, for topping. Serve right away.
NOTES
For extra-crisp waffles, don't overmix the batter — lumps are fine and keep them fluffy inside. Keep finished waffles warm and crisp in a 200°F oven directly on the rack while you cook the rest.
